Mom's Kitchen; EASY TO MAKE
SAVOURY VEGETABLE ROLL
Vegetarian friendly!

Allergy alert; Before starting the recipe, check first that you and those you cook for have no allergies to any of the ingredients. If you are allergic to any of the ingredients, then don't use this recipe.

You will need
Pastry;
240 g flour [gluten free flour for those allergic/intolerant to wheat]
Pinch salt
120g butter or ghee
iced water to mix

Filling;
1 tomato, finely chopped
1 onion, finely chopped
4 olives, finely chopped
5 ml chopped parsley
190 ml finely grated cheese
1 apple, finely chopped
1 green pepper, finely chopped
37,5 ml cooked lentils
5 ml dried mixed herbs
Salt & pepper

Preheat oven to 200 degrees Celsius

TO MAKE;
Pastry;
Sift flour and salt, rub in butter or ghee. Add enough water to make firm dough. Roll out into a rectangle.

Filling;
Combine all ingredients for filling. Sprinkle evenly over pastry, leaving 5 mm edge all round. Dampen edge with water and roll up as for swiss roll. Seal edges well. Glaze with milk. Bake for about 20 min on greased baking tray. Garnish with shredded lettuce, glazed apple slices and tomatoes cut into wedges.
