Mom's Kitchen; VEGETABLE STEW







Allergy Alert;Before starting the recipe, check first that you have no allergies to any of the ingredients.
If you are allergic to any of the ingredients, then don't use this recipe.

VEGETABLE STEW

What you will need;
4 aubergines
2 onions
410g whole peeled tomatoes
125 ml oil
12,5 ml vinegar
8 baby marrows
12 small button mushrooms
115g can tomato paste
4 green and red peppers
4 carrots
Salt and pepper
12,5 ml brown sugar


 How to make
Cut all vegetables into very small pieces.
Sprinkle aubergines and baby marrows with salt to taste, and allow to drain in colander for about 30 minutes.
Rinse very well.
Sauté onions in oil until soft, and add all other ingredients.
Add 500 ml to 750 ml water and bake at 180 degrees, one hour, with lid on.
Serve with rice and a French salad.
